Best Marinara Sauce
Vegetables, an ideal base for this sauce. I have found the balance of sugar and milk out roughness of all the ingredients of tomatoes. You can choose to add more or less of each. It will take some experimentation to find to their liking. This is perfect for my family.
We also put meat in the sauce for a touch of gravy and let it simmer for another 15 minutes or less.
1 medium onion, finely chopped
1 celery stalk, finely chopped
2 carrots, finely chopped
2 cloves garlic, chopped fine or pass through a garlic press
January 1928 oz Can crushed tomatoes
1 16 oz Can Tomato Sauce
A 6 oz Can tomato paste
3 / 4 C. Red Wine
1 t. Basil
1 / 2 t. Oregano
1 / 2 t. Crushed fennel seeds
1 t. sugar
2 T. milk
1 t. Sea Salt
1 / 2 t. Black Pepper crushed
In a heavy pot, or Dutch oven, heat 2 tablespoons olive oil. Add the onion, celery, carrots and garlic. Sauté over medium heat, stirring until vegetables are soft, being careful not to burn the garlic.
Add wine and let simmer until reduced until the liquid is gone.
Add tomatoes, tomato sauce and tomato paste until blended.
Add the remaining ingredients and mix well.
Mix in about 2 cups of water.
Let simmer for 1-2 hours until the flavors blend and sauce thickens.
Pour over cooked pasta and serve with Parmesan cheese.
You can also add cooked ground beef in the last 15 minutes of simmering in a sauce of meat.
If you do not use the entire recipe freezes well. By usually freeze it in single meal portions in zipper bags.
