Red Velvet Cupcakes Surprise for Valentine and other occasions
These wonderful little cakes red velvet sky has a sweet surprise kiss on the center. Imagine the joy of biting into one of these Red Velvet Cupcakes with surprise and get a bite of a soft sweet kiss. These easy to make muffins are perfect for many occasions, especially Valentine's Day Bridal Showers, Wedding Cakes, the list could go on and on. But what just for fun or because they are good? What better reason could there be?
SURPRISE RED VELVET CUPCAKES
24 Hershey's Kisses or Hugs
Batter:
1 1 / 2 sticks butter, softened
1 1 / 2 cup granulated sugar
1 / 4 cup unsweetened cocoa powder
1 teaspoon baking soda sodium
1 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1 cup buttermilk
2 tablespoons red food coloring liquid
2 teaspoons white vinegar
2 1 / 2 cups cake flour
Frosting:
2 (8-ounce blocks) cream cheese, softened
1 stick butter, softened
1 1 / 2 cups powdered sugar
1 tsp. vanilla extract
Dressing:
colored sugar sprayed according to the occasion.
Preheat oven to 350 degrees. Line 24 molds of tin with paper liners too. Unwrap caramels and put a at the bottom of each muffin tin lined. Set aside.
To make the cakes:
In a large bowl mix with a mixer on medium-high speed, Beat butter, sugar, cocoa powder, baking soda, salt and vanilla for 2 minutes or until creamy. Beat the eggs, one at a time, until blended. In a two cup measure stir together buttermilk, food coloring, and vinegar until well blended. With mixer at low speed, beat the flour in three parts mixture alternately with buttermilk in two additions. Beat until blended. Put a scant cup 1 / 4 of mixture over the caramel into each mold. Gently pour the caramel remains in the center. Bake at 350 degrees for 20-25 minutes or until a wooden toothpick inserted in center of cakes comes out clean. Cool in pan on a rack for 5 minutes before removing from pan. Then remove cake from pan and let it finish cooling on wire rack.
To make the glaze:
Beat cream cheese and butter in a medium bowl with mixer at medium speed until mixture is smooth and creamy. Reduce speed to low and add powdered sugar and vanilla. Increase speed to high and beat until light and fluffy. Frost cupcakes and sprinkle with sugar candy or other decorations to suit the occasion. Refrigerate until serving.
