Raspberry white chocolate cake with white chocolate cream cheese Frosting
Make this delicious layer cake to impress your family and friends. Believe that and start - WOW. Make this cake for Valentine's Day and the use of fresh raspberries to decorate with a big heart on top.
6 oz white chocolate
2-3 drops red food coloring
1 cup fresh raspberries, optional
Microwave white chocolate and butter in a bowl, stirring every 15 seconds until blended. Cool slightly.
In a large bowl, mix the dough, milk, eggs, raspberry extract, and butter mixture at low speed of electric mixer until moistened. Increase speed to medium and beat two minutes or until well blended. Pour evenly into two greased and floured 9-inch cake pans. Bake at 350 degrees for 35 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan for 10 minutes and remove from pans to wire racks to cool completely.
Frosting:
8-ounces cream cheese
1 / 4 cup butter bar
white chocolate baking 6-oz, melted
2 teaspoons raspberry extract
2 cups powdered sugar
Beat the cheese cream and butter in a large mixing bowl at medium speed until well blended. Add while chocolate and raspberry extract and mix well. Gradually beat powdered sugar until light and fluffy.
To assemble:
Take 3 / 4 cup of frosting and add the red coloring from the cake ingredients. Mix until well blended color. Take a cake layer and place in center of plate. Top layer cake with colored icing, spreading evenly. Place another layer on top of the frosting. Frost top and sides of cake with remaining frosting. If desired, arrange fresh raspberries around the top edge of the cake and the bottom. Or, put some fruit on top in the center.
